Gone are the days of eating boxed mac n cheese for lunch! I admit, there were plenty of times where that is what we ate…but not anymore! I am on a serious health kick and have really been trying to feed my family healthy, whole foods.
A couple of weeks ago I posted about doing a week of Whole 30. This was great to jump start my journey into getting healthier but I soon realized I was running out of options and depending way too much on fruit and nuts. In an effort to eat more of a well rounded diet, I have decided not to label what I’m doing. Instead I am looking at it as a lifestyle change. I am still making a lot of whole 30/paleo lunches and dinners because they are really easy and healthy but I’m okay if I have a little dairy or grains here and there. It’s all about balance and moderation!
I wanted to share with you a few of the meals we have been eating lately. I know it’s hard to find meals that the whole family enjoys…but these ones have been complete successes!
This is our go to lunch. I try on Sunday or Monday mornings to prep a bunch of chicken and sweet potatoes. It’s super easy and only takes about an hour. I just pre heat the oven to 375 degrees and then I bake the frozen chicken breasts for 45 minutes and the chopped up sweet potatoes for about 30 minutes or until they look done. I season the chicken with the 21 Seasoning Salute from Trader Joe’s. I always add a veggie which is usually broccoli or brussel sprouts. They come in microwavable bags now so I just cook them according to those directions!
This is Grey’s plate. He doesn’t like sweet potatoes so I gave him some grapes instead. He also would never in a million years eat all of this in one sitting so whatever he doesn’t eat, I just put in a tupperware for the next day!
These are paleo enchiladas that I made for dinner and they were SO GOOD! (Not really enchiladas because I can never get the tortillas to roll properly so I just layered it like a lasagna…but still same thing, right?) Anyways, we could not believe how good these were especially considering we didn’t put any cheese on them! The sauce was homemade instead of out of a jar and to my surprise it was just as good. The recipe has you make your own tortillas but I just bought some corn tortillas instead. You can find the recipe, here.
Grey had his own serving of enchiladas and from the look on his face and the mess, I’d say he approved!
This Whole 30 Zuppa Toscana soup was probably the best meal of the week! Kane loved it and I definitely plan on making it all winter long. I’m not going to claim it’s incredibly healthy because there is a fair share of sausage and bacon in it…but there isn’t any dairy, gluten or sugar! (Pick your battles, I suppose?) Anyways, it was delicious and perfect for a chilly Fall day! We served this to Grey without the broth (less mess!) and he loved it! You can find the recipe, here. Note: I made 1/4 of this recipe and it lasted us TWO days! Also, we used spinach instead of kale because our kale had gone bad during the week.
