My mom’s best friend, Pam, recently introduced us to some amazing monster cookie dough bites! They were so delicious and I knew I wanted to make them again…so I decided to try and “clean” them up a bit! I made a few changes and although I used some healthier options, I would still consider these a dessert. (So try not to eat the whole batch at once.)
To make this a little bit healthier, I used coconut oil instead of butter, natural peanut butter instead of regular, organic pure maple syrup, I cut back on the brown sugar and I didn’t use any m&m’s. In a perfect world, I would’ve used cacao nibs instead of chocolate chips…but this world isn’t perfect and the store I went to (AHEM Wal Mart) didn’t have any.
– 3/4 cup all natural peanut butter
– 1/4 cup coconut oil (melted)
– 1/2 teaspoon vanilla
– 1 tablespoon pure maple syrup
– 1/2 teaspoon baking soda (this really does make it taste like cookie dough!)
– 1/4 cup light brown sugar
– 1 cup oats
– 1/2 cup mini chocolate chips
*This recipe made 15 bites*
Mix together the peanut butter, coconut oil, baking soda, syrup, brown sugar and vanilla. When I first did this, it was SUPER runny and I wasn’t quite sure it was going to work out. No worries though because it was totally fine in the end!
Add in the oats and mini chocolate chips. Stir.
Scoop rounded balls onto a plate and stick in the freezer for about 30 minutes. Pam gave me the idea to use an ice cream scoop for this and it worked very well!
Take out of the freezer and ENJOY!!! I will admit, these don’t taste quite as good as the originals…but they are pretty darn tasty and will satisfy my sweet tooth! I put the rest in a tupperware in the fridge to keep them cool.
