I am sooo glad that it’s Tuesday. My Monday wasn’t the best I’ve ever had. I woke up to A TON of snow. Normally, I wouldn’t really mind but it’s ALMOST May!! I am ready for spring weather and waking up to snow on a Monday morning wasn’t the best way to start my day. Especially since my hubby is gone and I couldn’t take the truck.
Then I went off to work which went pretty quickly, however I did have some frustrations there so that didn’t help my already irritated mood.
I had an amazing lunch though! My favorite meal ever is my Dad’s stir fry. I’m not quite sure what he does different but it just tastes amazing. I recreated this dish and although it wasn’t as good as his, it was still pretty tasty!
I precooked the chicken in the crock pot and then shredded it. (Lately chicken has NOT sounded good at all and the only way I can eat it is if it’s cooked in a slow cooker and shredded.) Then I added some stir fry veggies and some low sodium soy sauce. I put all of this over some brown rice. So easy and so good!
My day only got worse though. I went to the gym after work and witnessed some very poor gym etiquette from one of the trainers. This bugs me from time to time but usually I can let it go. However, today it interfered with my workout and that was very irritating. I used this irritation as fuel though and ended up having a really good workout!
Post workout shake: 1 scoop protein powder w/ l glutamine. I want to start making shakes after my workouts that have protein, fruit, spinach and a little juice. This way my body can utilize the sugar from the fruit and I can get some more veggies in!
I spent the rest of my day with my girls and caught up on some TV shows to take my mind off of the stress.
This is how Daisy looks at the couch when she wants to jump up there. I quickly distracted her with a bowl of food. 😉
You could say I had a “case of the Monday’s”.
With all of that said, today is Tuesday and it is going to be a better day!!
