Since yesterday was the first day of spring, I decided to share an easy spring salad recipe. This is actually a recipe that my mom sent me the other night so thank you mom!! It’s just an easy cold salad that you can throw together very quickly.
First of all, I would like to give a HUGE shout out to my amazing husband because he surprised me with a new computer yesterday!! This is my very first post on the new one and I love it!! Thank you so much babe!
2 15oz cans of black beans, drained
1 small can of white corn, drained
1 red bell pepper, chopped
1 orange bell pepper, chopped
1/2 red onion, finely diced
1 peeled cucumber, chopped
3 T. olive oil
3 T. rice wine vinegar (We didn’t have any so I just left it out and it still tasted great!)
1 lime, juiced
Combine first 7 ingredients in a large bowl.
Add in olive oil, rice wine vinegar and lime juice.
Stir together until well mixed.
Chill in the fridge for 30 minutes.
Serve and enjoy!!

This would be great on a spring day with some grilled chicken breasts. My parents also used their leftovers for burritos and said they were very good! Let me know if you try it!!
